Sesame Soy Soba Noodle Salad Recipe
6 ounces soba noodles
1 C. diced tomatoes
1 red bell pepper diced
1 yellow bell pepper diced
1 orange bell pepper diced
1/2 C. red onion diced
1/2 C. Red Shell Sesame Soy Dressing
sesame seeds to garnish
In a large pot, add the pasta and enough water to cover the noodles. Bring to a boil and cook to desired hardness.
Drain and immediately transfer noodles to an ice water to stop the cooking process.
Drain the cooled noodles and pat dry with a paper towel.
In a large bowl, combine soba noodles and all of the cut vegetables.
Pour Red Shell Sesame Soy Dressing over the soba salad, and add sesame seeds and greens as garnish
