Black Rice Salad with Edamame Recipe
Ingredients:
1 cup black rice
4 scallions, thinly sliced
1 cup fresh edamame, shelled
1 cup grape tomatoes, halved
½ cup shredded carrots
1 red bell pepper, sliced thin
1 cup dinosaur kale, chiffonade
Salt and pepper, to taste
Red Shell Japanese Miso Dressing
Directions:
Cook rice according to directions. Set aside and cool.
Toss edamame, carrot, bell pepper, kale, and rice together well.
Add dressing and toss well again.
Serve cold as a side or main dish!
Shaved Carrot Salad
1 lb carrots
2 scallions, chopped
1 teaspoon black sesame seeds
? teaspoon fresh grated ginger
¼ red onion, minced
¼ cup Red Shell Sesame Dressing
1 teaspoon fresh dill
Peel the carrots. Using a vegetable peeler, shave each carrot into long paper thin strips. Place carrot shavings into a medium bowl. Toss with scallion, minced ginger, minced red onion, sesame seeds and dressing.
Serve with more scallions, black sesame seeds, and dill for garnish.
